The Nutritional Value of Groundnuts

A 100-gram serving of groundnuts provides approximately 567 calories, 25.8 grams of protein, 49.2 grams of fat, and 16.1 grams of carbohydrates. They are also rich in vitamins E, B6, niacin, folate, magnesium, phosphorus, and zinc.

Groundnut Chutney

Groundnut chutney is a popular condiment in South Indian cuisine. It's easy to make and pairs well with idli, dosa, and rice.

Ingredients:

  • 1 cup roasted groundnuts
  • 2-3 dried red chilies
  • 1 small piece of tamarind
  • Salt to taste
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • A few curry leaves

Instructions:

  1. Grind the roasted groundnuts, red chilies, tamarind, and salt to a coarse paste.
  2. Heat oil in a small pan, add mustard seeds, and let them splutter.
  3. Add curry leaves and pour this tempering over the chutney.
  4. Mix well and serve.

Groundnut Ladoo

Groundnut ladoos are sweet, nutritious treats that are perfect for festivals or as an everyday snack.

Ingredients:

  • 2 cups roasted groundnuts, coarsely ground
  • 1 cup jaggery, grated
  • 1/4 cup water
  • 1 tablespoon ghee
  • 1/2 teaspoon cardamom powder

Instructions:

  1. Heat ghee in a pan, add jaggery and water, and stir until the jaggery melts.
  2. Add the ground groundnuts and cardamom powder, and mix well.
  3. Cook for 2-3 minutes until the mixture thickens.
  4. Allow it to cool slightly, then shape into small balls.
  5. Let them cool completely before storing in an airtight container.
